Risotto takes a while to cook properly, and it requires your attention as well as your time.<\/p>\n

Ingredients<\/h4>\n

  • 1\u00bd cups arborio riceb<\/li>\n
  • 1 qt chicken stock<\/li>\n
  • \u00bd cup vermouth or another dry white wine<\/li>\n
  • 1 medium shallot or \u00bd small onion, chopped (about \u00bd cup)<\/li>\n
  • 3 Tbsp whole butter, divided<\/li>\n
  • 1 Tbsp vegetable oil<\/li>\n
  • \u00bc cup grated Parmesan cheese<\/li>\n
  • 1 Tbsp chopped Italian parsley<\/li>\n
  • Kosher salt, to taste<\/li>\n<\/ul>\n

    1. Rinse the quinoa in a bowl of water and drain.<\/li>\n
    2. Heat up a saut\u00e9 pan to medium and add the quinoa. Roast for about 7 minutes or until golden brown.<\/li>\n
    3. Add butter, vegetable broth, and soy milk. Stir continuously for about 10 minutes or until the quinoa is slightly tender.<\/li>\n
    4. Add the asparagus and cook for another 5 minutes or until the liquid has been soaked up. Keep stirring.<\/li>\n
